KEEP IN MIND:
Your growing conditions can change the pepper heat level to higher or lower. A wet season (or overzealous watering) can result in chiles that have less heat. Why? Because excessive watering can reduce the heat intensity of all peppers, leading to a milder flavor. Studies indicate that water stress strongly influences the buildup of capsaicinoids: the compounds responsible for pepper pungency. When subjected to limited water, pepper plants generally produce higher levels of capsaicin and dihydrocapsaicin. We suggest trying a few different chiles to find your favorite, and if you like hot chile, make sure to grow some of our hottest varieties.
