Did you know that chiles turn red when fully mature? While we pick many of them while still green, if left to fully mature on the vine they will turn red. So our red chile varieties such as Joe E. Parker can be picked at full size when still green or you can let them ripen to red for more flavor. Red chile is not often sold in stores or at markets as it is very perishable, so it is most often dried and sold in the form of Ristras, chile powder or flakes – so growing it at home is a great way to experience the buttery goodness that fresh red chile offers!
