
Question: Could you recommend an interesting & delicious pepper to grow that I can eventually use to make chile rellenos?
Answer: There is not just one perfect chile pepper for Chile Rellenos! While poblano peppers are historically the most commonly used peppers for rellenos, there are many varieties that are perfect for them. Our recommendation is to use any in-season variety of Hatch Chile, Poblano, or Anaheim Chile – you can enjoy any of them as chile rellenos! You can choose super hot Hatch chiles like the extra large and meaty Doublecross Hatch chile, or if you like less spice, mild chiles work great, too, such as the mild Hatch Guizeppi chile.

Our ever-popular heirloom Big Jim Legacy chile is a favorite for Chile Rellenos as it's large and has thick flesh that is packed with flavor when roasted.


Poblanos, shown above, are a classic pepper choice for Chile Rellenos. Be sure to grow our Gigantea Ancho Poblano, which has rich, smoky, yet sweet flavor. When poblano peppers are dark green-black they can be used for stuffing and roasting for Chile Rellenos.

But don't stop there, you can also make chile rellenos out of sweet peppers such as Cubanelles, Beaver Dam Peppers, super easy-to-grow Gypsy Sweet Peppers, or even smoky sweet Paprika peppers. If you want spicier rellenos, you can use Hot Hatch Chile or for something different, try hot peppers such as hot Jalapenos, Habaneros or Sriracha peppers for a wickedly spicy treat! Jalapeno poppers are, in a way, just miniature spicy Tex-Mex version of Chile Rellenos!
Get creative! Whatever chile you choose, be sure to pick out the freshest, meatiest peppers available – there isn't just one perfect chile for chile rellenos, so make them with whatever is in-season and looks good!
