Grow Authentic Mexican Flavor with Guajillo Chile Seeds
Bring the bold, sweet heat of Mexico to your garden with our premium Guajillo Chile Seeds. A cornerstone of traditional Mexican cuisine, the Guajillo pepper is celebrated as part of the "Holy Trinity of Chiles" alongside Ancho and Pasilla varieties. These versatile peppers are essential for crafting rich mole sauces and adding depth to salsas, stews, and marinades.
Why Choose Our Guajillo Chile Seeds?
Each packet contains 10 high-quality, GMO-free seeds that yield prolific plants thriving in dry climates. The peppers mature into stunning 4-6" pods with thin flesh and a glossy reddish-brown hue. Their unique flavor profile balances sweet fruitiness with a medium heat level (3,000–5,000 Scoville units) - perfect for those who enjoy warmth without overwhelming spice.
Easy-to-Grow & Productive Plants
These Capsicum annuum plants (75-day maturity) are low-maintenance powerhouses. For best results, start seeds indoors 8 weeks before warm nights. Soak seeds overnight, plant ¼" deep in seedling mix, and maintain 85°F soil with bright light. Germination typically occurs in 14–21 days. Transplant seedlings after 6 true leaves develop, spacing them 30" apart in rich soil or 5-gallon containers.
Harvest & Culinary Rewards
Pick peppers when they turn vibrant red for peak flavor. Dry them to create authentic Guajillo powder or rehydrate for sauces. Their thin walls make them ideal for quick drying while preserving their complex taste.

I have purchased multiple chilies from San seed. I have been very impressed with their quality and with the ability to regrow the seeds I live in South Texas and after I retired, my hobby is to grow chilies and I purchased my chili seeds for this purpose and they’ve come out beautiful great chilies great flavor
Fruity with a sweet heat and smoky flavor. I like to crush them to add to red chili stew.
These germinated in two days. I started them in midsummer and they fruited by late fall in my zone 10b garden and are overwintering just fine. I’ll have more to harvest by late spring. I made my red sauce for pozole for Christmas with my harvest!
Bought seeds last year(2024). Started early indoors with heat mat. Didn't have high expectations as I live in northern Michigan. I had to wait til June to out outside, but once established they took off. I had 4 plants and received 50-60 peppers. It wasn't the best summer for hot weather plants, but the seedlings were strong and resilient. They kept right on producing until frost. I waited until they turned color to pick the first batch. Once I picked, the plant went crazy, producing tons of peppers. Some I was able to harvest and some didn't get the chance to mature. I will definitely be planting again!
In zone 7a and they were producing until late October. I needed to buy a dehydrator because I had so many! Will definitely grow again.
So awesome! Love all the jars of powders... very nice.
Nice shape and color as well as being very prolific and reliable with excellent germination even in the far north! Won first place at the county fair.
I ordered the seeds in 2022, for planting in 2023. Sandia was so generous with the amount of seeds I received in the packet, twice the amount I was expecting. The germination was 100%, and wow! The amount of peppers I got from 10 plants was incredible, especially for our northern climate! I had lots to give away. Mostly I dehydrated them when they ripened and turned them into pepper flakes, (just the aroma of them makes my day!) but I also stored some dried peppers in vacuum sealed jars. Those plants kept on producing heavily until the frost finally killed them. I still have many seeds left, and have planted again this year. Still germinating perfectly! I can't recommend them highly enough!
Thanks for selling these seeds so I can grow them in my garden in Colorado. They grow very well here, and dry nicely for storing for winter use.
We love growing these to dry and grind into pepper flakes and powder which is perfect for adding to all sorts of dishes to kick up the flavor and add a little bit of heat. We grow these every year, thank you for the exceptional seeds with great germination.
Ours grew to over 6 ft tall! Lots of fruit. These are great roasted and used for salsa.
