Wax Peppers

Wax Peppers Question:


Hi! I've been in search of those little yellow wax peppers, but I'm not sure which to buy. The only reference I have is that the restaurant In and Out usually includes them if you ask for hot peppers. The peppers themselves are 1 to 1.5" long, like 1cm wide, they're not too hot, and usually are served pickled and salty. Do you sell something like that? I think they may be called "cascabella"?


Answer:

We do have yellow wax peppers varieties that are great in pickles, including the famous Cascabella peppers which restaurants like to serve, and you can get them at the store too – Mezzetta uses Cascabelas for their pickled Hot Chili Peppers
 

Here are some of our favorite Wax Peppers:

Cascabella pepper seeds

We do carry Cascabella pepper seeds, which produce medium hot wax-type peppers. These are the same peppers you'll find in Mezzetta™ Hot Chili Peppers (those jars of spicy yellow pickled peppers). Wax Peppers: Sweet Hungarian Peppers Seeds

Hungarian Wax Pepper Seeds:

The first is our Sweet Hungarian Wax Peppers, they get a little bigger around 4-5", these Hungarian sweet peppers are often pickled and are delicious on burgers, sandwiches and wraps. Hungarian Wax Pepper plants are great for short seasons as they grow quickly and are very productive in the garden.

We also have Hot Hungarian Wax Pepper Seeds, which are similar wax peppers but have a lot of heat.


Great for pickling or for making the delicious
Hungarian Hot Peppers in Oil Recipe:

Just add wax peppers, fresh garlic, oregano and salt to Olive Oil and store in a glass jar in the fridge.

You can also salt the peppers first and draw the moisture out of them in a colander for a few hours. You can also roast them first, and peel before jarring them. We usually just throw all the ingredients in a jar and let them sit in the fridge for at least a week or two.

Preserved wax peppers are great for sandwiches, wraps, salads, on warm, fresh baked bread, anything really!

Wax Peppers: Sweet Banana Wax Peppers

We also have Banana Peppers which are great pickled
or marinated in oil (see recipe above).

Banana peppers look and taste much like the sweet Hungarian Wax as they are quite mild reaching only 0-500 Scovilles.


Wax Peppers: Santa Fe Grande Peppers

For a smaller hot pepper that is similar to Cascabella peppers, you could also grow the beautiful Santa Fe Grand Pepper. This colorful pepper has three colors of maturity: first yellow, then orange, and red, and they can all be on the plant at the same time. This is one of our customer favorites as it's easy to grow and very productive.

This wax-type heirloom pepper bears fruit continuously all summer on 30" plants. The fresh 3" long peppers have thick flesh and moderate heat, so they are ideal for salsa and pickling fresh.

These are all similar to Cascabella peppers, just bigger, which you may prefer for your pickled peppers!
