What makes these chiles "Lemitar chiles" is the growing region in New Mexico. It's all about the Terroir (pronounced ter-wahr), which is the French concept defining how natural factors including soil, climate, topography, and the environment collectively influence agricultural products, like chile and wine.

Lemitar, New Mexico is one of three major chile growing regions including:
- The Lemitar region is in the Soccoro Valley
- The Hatch region is in the Mesilla valley
- Chimayo and Velarde are in the Northern Foothills and Española Valley
Each of these chile growing regions offers slightly different chile tastes – all delicious, but with their own flavors imparted to them from the region.
