
- 3-4 cups fresh tomatoes, chopped*
- 1 cup diced onion (green onions, or use a red or white onion)
- ¼ cup diced fresh cilantro (you can dice up stems and all!)
- 2 tablespoons fresh lime juice (~1 lime)
- 1-2 jalapeño peppers* (diced, including seeds)
- ½ teaspoon ground cumin
- 1-3 cloves of garlic, minced
- Salt and pepper to taste
*You can use any mixture of different tomatoes and hot peppers for this recipe to enjoy the different flavors of your harvest! Habaneros are especially tasty in fresh salsa, so be sure to try them if you like heat!
Mix all the ingredients together, let the flavors meld for an hour in the fridge, and serve! Of course you can also eat it right after you make it, but the flavors will get even better with a little rest time.
Enjoy with tortilla chips or on tacos or burritos.
