Why Choose Our Big Jim Chile Seeds?

Authentic Hatch Valley Heritage: Grown straight from New Mexico chile farmers, these seeds produce 7" long chiles on productive 30" plants. The medium heat level (Scoville 2000-4000) makes them versatile for all your culinary creations.

Easy to Grow: Whether you start them indoors for an early harvest or sow directly into warm soil, these Hatch Green Medium chile plants thrive with minimal fuss. Just provide bright light, keep the soil moist, and watch them flourish!

Perfect for Roasting & Everyday Cooking

Harvest these flavorful chiles while green for that classic Hatch taste, or leave them to mature into rich red chiles. Their thick flesh makes them ideal for:

  • Roasting and peeling for authentic green chile sauces
  • Stuffing for delicious chile rellenos
  • Enhancing breakfast scrambles, lunches, and dinners
  • Canning or freezing to enjoy year-round

Each packet contains 30 heirloom seeds from New Mexico, ready to bring a taste of New Mexico to your garden. For even more variety, try pairing with our Hatch Red Medium - Joe E. Parker or Big Jim Legacy seeds!

Growing Tips for Success

Start seeds indoors 8 weeks before warm weather. Plant 1/4" deep in sterile media with 85°F bottom heat. Transplant when seedlings have 6 true leaves, spacing 30" apart in rich soil or large containers. Keep soil moist for best results.

Awesome peppers!

This was my first time growing these and I will definitely be growing them from now on. Great germination and very sturdy plants that have withstood some really high winds. Huge long peppers that are excellent green or red, very easy to peel skin.

Spunky chile plants

We live in North Central Idaho in the mountains. Our seeds all terminated and I had a very good crop of green chile considering where we live. They are thick meated and have great flavor and just the right heat.

Best chile, hands down

Easy to grow, nice large pods with thick flesh. I roast them on my grill, peel, and use them for everything from green chile to pizza toppings. If only I had a larger garden, I'd grow tons more. You can never have enough green chile. I used to live in New Mexico but am now up in Minnesota, so being able to grow and enjoy these delicious chile is a treat. I turned my gardening neighbors and friends onto them, too.

Best Pepper Seeds

I'm a huge fan of sandiaseed.com - a small woman-owned seed company, they're based currently in Colorado, but originated in New Mexico. They have over a hundred different kinds of peppers, and their seeds all grow true and have good germination. We grow their Hatch chile varieties every year including this Big Jim, one of our top favorites! Also love growing their habaneros & jalapenos (they have several different varieties of each!) plus some of their sweet peppers like Shishitos and Fushimis. They have super fast shipping, and have a seed replacement policy and will replace seeds if they fail (though I've never had a problem in the many years of growing about 15 different varieties each year from them for over 8 years.) Two thumbs way up from this chilehead. :)

Our family's favorite chile!

Great seeds, good germination, plants grow quickly and produce lots of pods for roasting. Great flavor and just the right amount of spice. We grow these every year in our garden in Utah.

Get these every year

These grow large. We roast them and peel them and make green chile from them. My husband adores them.
Made Chili Mac for my Step son and he ate it all in one sitting.
I plant 10 plants every year.

These germinated and grew beautifully, was happy to use them to create the delicious green chile of my home but in a new country!

Excellent

Excellent germination, heat level and flavor. After living where Hatch chilis were a part of our every day, I’m glad to grow them in Idaho!
