It is said that these green chile varieties, grown in the region of Hatch, New Mexico, take on flavors from the unique terroir (terrior is a French word which refers to the unique environmental factors that affect the characteristics of agriculture, such as wine grapes or green chile. So Hatch Chile is special due to where it is grown – the soil, the land and weather. What Makes Hatch chile so special?


Most Hatch Chile are picked early when green, then roasted and peeled – these chile have a very smoky, buttery, upfront flavor with spice that is unlike any other.
