Savory Apple Recipe:
Spicy Zucchini Fritters with Apples & Jalapenos
- Shredded zucchini (1-3+ cups)
- Flour (1/2cup-1.5+ cups)
- 2-3 Jalapenos, chopped
- 1/2-1 cup+ green onions, chopped
- 1-2 apples skin removed, shredded
- 1 egg
- 1/2 cup of Peanut butter (or other nut butter, or tahini)
- Fresh herbs (chives, oregano, thyme, sage, dill, your choice!)
- Curry powder (optional)
- 1/2 cup shredded cheese (optional)
- 3-6 garlic cloves, chopped
- Petals from fresh Marigolds (optional, gives it some flavor and great color!)
- Salt and Pepper to taste
We mix all these ingredients together, adding more flour as needed, toss with flour until thick and easy to spoon into small fritters on a hot cast iron pan in a tablespoon or two of olive oil. Wondering where's the liquid? Well, the zucchini and apples provide the moisture – so add more flour as needed until the mixture is thick and spoonable, a little thicker and chunkier than pancake batter. Fry on both sides until browned, you can do multiple batches with a lot of zucchini, and then put them in the oven on a cookie sheet or glass lasagna dish at 325˚ F to keep warm and crispy so you can make them all for a large crowd.
These fritters are delicious and easy to eat, and taste great with hot sauce!
We like to add marigold petals (or calendula petals) to add color and depth of flavor in these fritters. Totally optional, but fun and colorful! It looks like cheese.
