Fatalii Pepper Salsa Recipe

This is a great fruity and spicy salsa with tomatoes, pineapple and the tropical flavored Fatalii Peppers that add a great citrus heat. Fatalii peppers are also famous for making a fruity flavored hot sauce, check out our Easy Fermented Hot Sauce recipe » 

  Fatalii peppers are hard to find at grocery stores, so if you can grow your own, you will have so many that you can share them with friends and dry or freeze some for year-round and winter use. 
This Fatalii Salsa is great to serve at a party, make a double batch if you want it to last more than five minutes if sharing! This Fatalii Salsa goes great with tortilla chips. 


4-5 Large Fresh Tomatoes, Chopped, Drained
(we like to save juice for cooking or adding to recipes later)
(Heirloom Tomatoes are the most delicious!)

1 Cup Chopped Fresh Pineapple

1/2 Cup - Fresh Cilantro leaves
 
(optional for those who absolutely hate it ;)

1 or more Fatalii Pepper
(Add more if you like it hotter. Fatalii peppers are easy to grow from seed, or any kind of hot Peppers work in this recipe!)
1/2 Onion 
(diced & soak in cold water 20+ minutes to sweeten and mellow)
3-4 Garlic Cloves
Fresh Lime Juice (1 lime)
1 Teaspoon of Sugar
Salt & Pepper to taste


Chop up tomatoes, drain. Chop up pineapple, and all the other chopped ingredients, squeeze lime and add salt and pepper to taste. Refrigerate for an hour to blend flavors, though we often just eat it right away! :)
