Red Chile Powder Recipe


Red Chile Powder - Homemade

This red chile powder recipe is quick and easy to make from scratch. It has an incredibly robust and vibrant flavor when compared to store bought powders. 

INGREDIENTS  

  • 4-6 cups Dried Red Chile peppers or 4-6 ounces (We recommend a combination of hatch red chiles, ancho, guajillo and any other variety you like, and if you want heat add some arbol or cayenne.)
  • 2 tablespoons Garlic Powder or freshly dehydrated garlic
  • 2 tablespoons Onion Powder or freshly dehydrated onion
  • 2 tablespoons whole Cumin Seeds or 1 teaspoon Cumin Powder
  • 1/2 tablespoon dried Mexican Oregano
  • 1/8 teaspoon ground Clove (optional)
  • 1/8 teaspoon ground Allspice (optional)
  • 1 teaspoon freshly ground Black Pepper (optional)

INSTRUCTIONS 

Remove the stems from the dried chiles and scrape out and discard the seeds and membranes. Heat a cast iron or heavy pan over medium-high heat and place the chiles in the pan in a single layer so they're not overlapping. Quickly toast the dry pods on both sides just until fragrant. This will only take just a couple of minutes. Or they can be quickly toasted on a cookie sheet in a warm 250 degree oven. Remove and let cool. 

Once the chiles are completely cool, place them into a spice/coffee grinder or molcajete/mortar and pestle. Pulse or grind the chiles until they are very small pieces. Then add all the remaining ingredients and grind until powder. Taste your chile powder now to determine if you want to add additional spices at this time. Grind again until the pieces are very small and a powder consistency. Then transfer to an airtight jar for storage. For best flavor use within a few months. Recipe makes 1-2 cups chile powder.
