Green Chile Shepherd's Pie Recipe
If you love green chile, then you have to try out this amazing Green Chile Shepherd's Pie Recipe – it is a New Mexican twist on the the classic Irish dish.
INGREDIENTS
- 4 large potatoes, diced
- 1 stick of butter (or 1/2 cup of olive oil)
- 1 onion, chopped
- 2 cups mixed vegetables (diced carrots, peas, corn)
- 1 cup of roasted Green Chile (peeled, de-seeded, and chopped)
- 1 1/2 lbs ground round beef, chicken or pork (or omit the meat for a vegan version! Add mushrooms, lentils or beans if desired.)
- 1 teaspoon Worcestershire sauce
- 1/2 Cup Water
- Salt & pepper, a dash of red chile powder and cumin to taste
Boil quartered potatoes in salted water, reduce to a simmer, and cook until tender (15-20 minutes), then mash with butter. Meanwhile, sautée the vegetables in a pan until tender, about 5 minutes (put onions and carrots in first, add peas green chile, and corn last). Set aside, cook meat with worcestershire sauce and then mix everything together, adding water if it gets too dried out. Layer vegetable and meat mixture in a casserole dish or deep cast iron pan. Layer mashed potatoes on top in an even layer, then rough them up so they get peaks to get browned. Bake at 400˚ F until browned and bubbling, about 30 minutes. You can also broil it for the last 5 minutes to get the surface more browned.
