Fresh Garden Tomato Salad
Ingredients
4 large ripe tomatoes, cut into wedges or chunks
½ small red onion (or bunching green onions), very thinly sliced
½ cucumber, sliced
¼ cup fresh basil, torn
2 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
1 small garlic clove, finely minced
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
½ teaspoon dried oregano
Optional: ½ cup crumbled feta
Directions
- Combine the tomatoes, cucumber, red onion, and basil in a bowl.
- Whisk together the olive oil, vinegar, garlic, salt, pepper, and oregano.
- Pour the dressing over the vegetables and gently toss.
- Let the salad sit for 10–15 minutes before serving so the tomato juices mingle with the dressing.
- Sprinkle with feta, if desired.
