
Roasted Giant Marconi Peppers with Garlic & Parmesan Recipe
A delicious way to enjoy the wonderful taste of Giant Marconi peppers!
2-4 Giant Marconi Peppers
2 tablespoons olive oil
2 cloves garlic, minced
¼ teaspoon salt
Freshly ground black pepper
¼ cup freshly grated Parmesan cheese
2 tablespoons chopped fresh basil
1 tablespoon balsamic vinegar, optional
Heat oven to 425°F. Cut the Giant Marconi peppers in half lengthwise and remove the seeds and stems. Place them cut side up on a baking sheet.
Drizzle with olive oil and sprinkle with garlic, salt, and black pepper. Roast for 20–25 minutes, until the peppers are tender and the edges begin to caramelize.
Sprinkle with Parmesan and return to the oven for another 3–5 minutes, just until the cheese melts.
Finish with fresh basil and, if desired, a small drizzle of balsamic vinegar.
Serving idea: Serve warm alongside grilled chicken or steak, put them on crusty Italian bread, or serve them as an appetizer.
