*Pepper size and heat vary with growing conditions.

1. Big Jim Legacy – The Biggest of the Three
Big Jim Legacy is the variety to grow when size matters. Its enormous 8–10 inch pods have thick, meaty walls and a relatively small seed cavity, making them especially desirable for stuffing.
The rich, traditional New Mexico chile flavor and mild-to-medium heat make this an outstanding roasting pepper. The thick flesh also makes peeling easier after roasting.
Best for: Giant chile rellenos, roasting, freezing, and red enchilada sauce.

2. Big Jim NuMex – The Classic New Mexico Chile
Released by New Mexico State University in 1975, NuMex Big Jim is one of the best-known New Mexico green chiles.
The peppers grow approximately 8 inches long and 2 inches wide. Their broad shoulders, slightly flattened shape, and characteristic hooked tips make them easy to recognize.
NuMex Big Jim plants are generally shorter than Legacy plants, reaching approximately 16–26 inches tall. This makes them a good choice for gardeners looking for large chile pods on more compact plants.
Best for: Traditional New Mexico cooking, chile rellenos, and roasting.
3. Hatch Green Medium Big Jim – The Everyday Favorite
Hatch Green Medium Big Jim is a popular choice for gardeners who love authentic Hatch-style green chile with satisfying medium heat.
Its approximately 7-inch pods are thick, flavorful, and well suited for roasting and peeling. Productive plants grow around 30 inches tall and deliver a generous harvest under good conditions.
This variety is particularly versatile in the kitchen. Roast the peppers for green chile stew, chop them into scrambled eggs, add them to burgers, or use them in enchiladas.
Best for: Everyday cooking, green chile sauce, roasting, and freezing.

Which Big Jim Chile Should You Grow?
The best Big Jim depends on what you're looking for.
- Want the largest peppers? Choose Big Jim Legacy. Its thick, oversized pods are perfect for impressive chile rellenos.
- Want a traditional New Mexico variety? Choose Big Jim NuMex, the classic 1975 release with its distinctive shape and excellent roasting qualities.
- Want an all-purpose green chile? Choose Hatch Green Medium Big Jim for reliable production, delicious flavor, and medium heat.
All three have overlapping Scoville ranges, so don't expect dramatic differences in spiciness. Growing conditions, temperature, and individual peppers can influence the heat.

Growing Tips for All Three Big Jim Varieties
Big Jim chile peppers love warm temperatures, sunshine, and well-drained soil.
Start seeds indoors about eight weeks before nighttime temperatures are consistently warm enough for transplanting. Plant seeds ¼ inch deep and provide bottom heat around 85°F to encourage germination.
Once seedlings are established and outdoor conditions are suitable, transplant them into rich garden soil, spacing plants approximately 30 inches apart. They can also grow in large containers of at least five gallons.
Harvest the peppers while green for traditional roasted green chile. Or allow them to ripen to red for a sweeter, more mature chile flavor that's excellent in red sauces.
