2-3 cups of chopped Fresh Tomatoes
(or a jar or large 28oz can of preserved tomatoes)

1 Bunch of fresh Cilantro leaves
(use as much as you'd like)

1-3+
Jalapenos - any variety
Note: You can also use any fresh or dried hot peppers for this recipe (Santa Fe Grande PeppersCayenne PeppersHabanero PeppersThai Hot PeppersRed Cherry Hot PeppersGhost Peppers, you name it!

1/2 Onion, Diced*
(optional: soak in cold water 20+ minutes
to sweeten if it's a very strong onion)

3-6 Garlic Cloves

Fresh Lime Juice
(1 lime)

1 Teaspoon of Sugar or Honey (optional)

Teaspoon of Cumin & Chile Powder

to your taste

Salt & Pepper

Process everything (excluding onions) in a food processor.Add diced onions at end and blend for just a second so the onions stay chunky. Put the salsa in a glass container and store in the fridge for an hour+ for flavors & spice to develop. Enjoy with chips, on tacos, burritos, or even sometimes with a spoon! 😉

Recipe Variations:

* You can also use diced green bunching onions (aka scallions) in this salsa, put all of the diced white and green parts of the onion in, they add a lot of flavor and color to this salsa and are packed with vitamins.

Make this recipe into a unique Orange Salsa
with orange tomatoes and orange jalapenos!

You can also substitute tomatillos instead of using tomatoes to make a salsa verde. Leave out the sugar/honey, as ripe tomatillos are quite sweet on their own!

Experiment with different varieties of jalapenos,
some are much hotter than others!
