Exceptional Flavor & Culinary Uses

Chilhuacle Negro peppers are the heart and soul of traditional mole negro, a classic Mexican sauce. With their mild heat (1,500–2,500 SHU), they deliver bold, dark flavors reminiscent of chocolate, tobacco, and dried plum. They are perfect for adding depth to soups, stews, and rellenos without overwhelming spice.

Unique Growing Characteristics

These compact plants at 18" tall are a spectacle in any garden, laden with leathery, brownish peppers that practically dry themselves. Their naturally low moisture content and matte skin make them ideal for effortless drying. With a quick maturation time of 95 days, they’ll keep producing well into autumn.

Easy to Grow & Harvest

Each packet contains 10 heirloom, open-pollinated seeds. Start indoors 8 weeks before warm weather, using sterile media and 85°F bottom heat. Transplant seedlings with 6 true leaves into rich soil or 5-gallon containers, spacing 30" apart. Harvest green or wait for their signature brown hue.
